Our Commitment

Hidamari is a Nomidokoro opened in Kitashinchi with a passion for providing genuine dishes (made with high quality ingredients prepared with the best cooking method) at a reasonable price.
In addition, we focus on “dietary education” as recommended by the Ministry of Agriculture, Forestry and Fisheries, and endeavor to provide our customers with a premium experience through our dishes, hoping to improve their lives.

We only use the ingredients that the owner actually tried and confirmed that they are the best quality.
The main ingredients are Omi beef and organic vegetables.
We cook them in a way to bring out the best of their natural flavors.

Our specialties include what is called “Non-Grilled Steak.”
As meat hardens at 62 to 63℃, we cook them slowly at 60℃ with low-temperature cooking technique. This way the meat turns out very tender.
We employ a cooking method that brings out the full flavor of the ingredients.

We only offer alcoholic drinks that our owner, who loves to drink, thinks good.
For example, our beer lineup includes craft beer from Saitama and various Japanese whiskeys.
We also have a fine selection of Japanese sake that pairs well with our food. Please feel free to ask us which sake goes with your dish.
